ROLE OVERVIEW
The Bar Manager, Mandala Club, is responsible for the strategic direction, planning, leadership, creative vision, implementation,
measurement and reporting of the full Beverage function of the Club. The Bar Manager is fully accountable to the Beverage Director of the Mandala Group and the General Manager of the Club.
It is an extensive role requiring an accomplished and creative professional. The Bar Manager must take holistic ownership and deliver game-changing commercial and reputational performance.
KEY OBJECTIVES & DELIVERABLES.
MAIN RESPONSIBILITIES
This is a position based out of Mandala Club premises in Singapore.
1) Delivery of business performance
● Under the direction of the General Manager of the venue and of the group Beverage Director, ensure that business performance remains aligned to the annual budget with all operations and creative activations aligned to ensure the delivery of commercial targets.
● Full development and costing reporting of the beverage menus to ensure the gross profit targets are achieved.
● Measurement and evaluation (M&E) to be documented and completed for all menu development exercises and presented where required.
● Leading the beverage team by attracting, recruiting, training and appraising talented personnel.
2) Full ownership of the beverage program. Delivery of fully planned and expertly crafted menus that demonstrate originality, creative flair, and an understanding of ingredients.
● Devise a comprehensive 12-month activation calendar, including guest shifts, media activations, guest speakers, cocktail competitions, and hosting leading industry speakers.
● Create menus tailored to the brand guidelines that are innovative and well-balanced.
● Preserve excellent levels of customer service through service training and implementation of the venue-specific cycle of service guidelines.
● Design exceptional menus in coordination with the creative team.
● Purchase goods and continuously make necessary improvements to the product mix.
● Identify customers' needs and respond proactively to all of their concerns
● Establish targets, KPIs, schedules, policies, and procedures
● Nurture an ownership environment with an emphasis on motivation and teamwork
● Comply with all health and safety regulations
● Deliver an increasingly sustainable beverage program across multiple sites.
